This is fantastic with Chilli Con Carne

100g Butter
270ml Buttermilk
2 Free Range Eggs
140g Dried Polenta
140g Plain Flour
25g Sugar
2 tsp baking Powder
1/2 tsp Baking Soda
1 tsp Salt
2 ears of fresh sweetcorn,the kernels sliced off from the cob
100g Grated mature Cheddar
1-2 green chilli,seeded & finely chopped
4 spring onions

Heat oven to 200/fan 180/gas6. Melt the butter in an ovenproof frying pan (Or a smallish roasting pan).Make sure the betteris swirled all over the base & the sides of the pan.
Whisk together the buttermilk & eggs.
Combine the polenta,flour,sugar,baking powder,baking soda & salt in a large bowl.
Pour the buttermilk mix onto the dry ingredients,followed by the melted butter.
Mix together then stir in the corn,cheese,chillis & spring onions.
Pour into the frying pan or roasting tin & bake for 25-30 mins until the top is brown.
Serve warm or at room temperature.
