Cinnamon's Mexican Eggs

1 large onion
2tbsp olive oil
2 cloves garlic,crushed
1-2 fresh green chilli,seeded & chopped (or 1tsp crushed dried chilli)
2 tsp ground cumin
2 x 400g cans chopped tomatoes in rich juice
4 tbsp chopped coriander
4 large free range eggs
50g grated cheddar cheese


[edit] Method

Fry the oinion in the oil for 8 mins, then add the garlic,chilli & cumin & fry for a minute more.
Tip in the tomatoes & a good pinch of suger & cook for 10 mins until pulpy.
Stir in the coriander & some seasoning.
Make 4 deep hollows in the tomato mixture with the back of a spoon & crack an egg into each one
Scatter over the cheese,cover the pan & cook gently for 6 mins until the eggs are nearly set.
Finish off with a quick blast under the grill,so the cheese goes bubbly.

Serve with crusty french bread & red wine!
