Egluntine's Sugarfree Orange Sultana Bran Cake

- 225g Plain Wholemeal Flour
- 2 tsp baking powder
- 275mls unsweetened orange juice
- 225g sultanas
- 75g butter or good quality sunflower margarine
- 2 eggs, beaten
- 25g wheat bran
- 2tsp mixed spice

- Soak Sultanas overnight in orange juice
- Pre heat oven to gas mark 4/180C/350F
- Line 2lb loaf tin with baking parchment
- Mix together dry ingredients
- Rub butter/margarine till it forms crumbs
- Stir in beaten eggs, sultanas and orange juice
- Transfer mixture to loaf tin and bake for 90 minutes.
- Cover with foil half way through cooking as the top may burn.
