Egluntine's Sugarfree Orange Sultana Bran Cake

[edit] Ingredients

  • 225g Plain Wholemeal Flour
  • 2 tsp baking powder
  • 275mls unsweetened orange juice
  • 225g sultanas
  • 75g butter or good quality sunflower margarine
  • 2 eggs, beaten
  • 25g wheat bran
  • 2tsp mixed spice

[edit] Method

  • Soak Sultanas overnight in orange juice
  • Pre heat oven to gas mark 4/180C/350F
  • Line 2lb loaf tin with baking parchment
  • Mix together dry ingredients
  • Rub butter/margarine till it forms crumbs
  • Stir in beaten eggs, sultanas and orange juice
  • Transfer mixture to loaf tin and bake for 90 minutes.
  • Cover with foil half way through cooking as the top may burn.
