Kate's Magic Muffins

[edit] Ingredients

  • 10oz plain flour
  • 2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 2 tsp ground cinnamon
  • 3 tbsp unsweetened cocoa powder
  • 1 egg
  • 4-5 oz soft brown sugar
  • 2 fl oz milk or water
  • 2 tsp vanilla extract
  • 2 cooked beetroots - grated
  • 1 eating apple - skinned, cored and grated
  • 3 fl oz sunflower oil
  • 3 oz raisins or chocolate chips

  • Prepare muffin tins by lining with paper cases or grease well. Preheat oven to 190-200C
  • In a large bowl, sift together flour, baking powder, bicarb, cinnamon and cocoa powder. Set aside.
  • In another bowl, beat egg with a fork. Add brown sugar, milk/water, vanilla, grated apple, beetroot, raisins/chocolate chips and oil. Mix well.
  • Pour wet ingredients into dry ones and stir until just combined. It will look really lumpy but don't worry - that's how it should look. So long as no dry flour is visible, it's fine.
  • Spoon into tin and bake for 20-25 minutes until tops spring back when pressed gently. Cool on wire rack.
