Little cluckers' Sultana Tea Loaf

[edit] Ingredients

  • 225g sultanas
  • 175ml cold black tea
  • 225g self raising flour
  • pinch salt
  • 175g demerara sugar
  • 1 large egg

[edit] Method

  • Soak sultanas in tea for a couple of hours.
  • Preheat oven gas 4.
  • Butter a 2lb loaf tin
  • Sift the flour into the sultanas and tea mixture.
  • Add the salt and sugar and stir in.
  • Beat the egg lightly then stir that in too.
  • Spoon into loaf tin and bake for about an hour.
